Evaluation of hygiene practices in dining rooms in three early education centers in Mariño municipality, Nueva Esparta state

In the present work, a hygienic evaluation of the food preparation areas in three Early Education Centers (CEI), which were named A, B and C, located in the city of Porlamar, Mariño municipality in the state of Nueva Esparta. An analysis of the non-conformities found in the audits was made for each of the following aspects evaluated: building and facilities, equipment and utensils, personnel, hygienic requirements of production and sanitation program. For the IEC A, B and C an unsatisfactory hygienic effectiveness (HD) was obtained of 59.41; 65.38 and 67.04 % respectively, being the minimum approval of 70 %. Personnel hygiene was the aspect
with the greatest defi ciencies observed, with 26.67%, 60.00% and 33.33% for IRBs A, B and C, respectively.
